| Castello di San Donato extra virgin olive oil is green in colour with golden reflexes. The oil is fruity and slightly spicy in flavour with a slightly bitter aftertaste. A harmonious oil that results dense and consistent to the touch.

A true specialty to be consumed raw or on any cooked dish in particular with vegetables and grilled meat.

The olive groves
We have approx. 4 hectares of olive groves with 3.500 trees of
Frantoio, Moraiolo and Leccino varieties situated at 450 metres
above sea level between the villages of Gaiole and Radda in Chianti.

The
Harvest and pressing
The olives are hand-picked during the months of November and December.
The Olives are then taken immediately to the mill and ‘cold pressed’
in the total absence of oxygen. |
