The wine making estate covers a area of approximately 370 hectares in the heart of the Chianti Classico DOCG region. It is an area extremely well known for the production of wine and is situated in between the villages of Radda and Gaiole in Chianti.
The vines are grown using the spurred cordon training method with a density of 5,000 plants per hectare at an altitude which varies between 300 and 500 metres above sea level.
The terrain is characterized by a high stony content and steep slopes (15 – 20 %) which aids considerably the draining properties of the land.
The favourable climate is dry in the summer whilst the month of September has a sharp and contrasting temperature range between day and night.
Thanks to such favourable climatic and environmental conditions it is possible to produce high quality full bodied wines and excellent extra virgin DOP olive oil.
Our olives groves have over 3,500 plants including the Frantoio, Moraiolo and Leccino varieties.
The olives are hand picked during the months of November and December; the olive pressing (cold pressed without oxygen) is done on a daily basis in the Vertine Oil Mill, which is only 150 metres from the estate. The pressing procedures comply with the with D.O.P. extra virgin olive oil production code.
For the past 25 years San Donato has rented a vinegar producing plant in Modena, the home of balsamic vinegar and for this reason it can name its vinegar ‘aceto tradizionale di Modena’.
The farm also offers a variety of Chianti Classica grappas which are produced in a distillery renown for its enological and distillation knowledge. It is situated in a asmall village called Faver, in Val di Cembra where there is an abundance of water and mills.
